- 8 slices bacon, cut in half-inch pieces
- 1 medium onion, chopped
- 2 eggs, slightly beaten
- 1/4 cup sugar
- 1 teaspoon salt
- 1/2 cup vinegar
- 1/4 cup water
- 2 bunches leaf lettuce, washed
Pan-fry bacon and onion in a skillet until bacon is crisp. Combine eggs, sugar, salt, vinegar, and water, and add to mixture in skillet. Heat and stir until slightly thickened.
Tear lettuce into a salad bowl; pour hot dressing over and toss lightly.
Yield: 8 servings.
