- 2 bunches salsify root (oyster plant)
- 1/2 teaspoon salt
- water
- about 5 cups milk
- 2 tablespoons butter
- salt and pepper to taste
Wash and scrape salsify root and cut in 1/4-inch slices. Barely cover with water to which the 1/2 teaspoon salt has been added. Simmer until very tender, about 25 minutes. Do not drain, but add hot milk as desired.
Add butter, then salt and pepper to taste. Bring just to boiling point and serve with oyster crackers. Serves 4 to 5.
This stew improves if left to blend over very low heat for about 1 hour, but be sure it does not boil. This really does taste like oyster stew and can be served to those who love the taste of seafood but are allergic to shellfish.
