Veal Custard Recipe

  • 3 cups cooked veal, ground
  • 1 cup broth or milk
  • 2 tablespoons butter
  • 2 eggs
  • 2 tablespoons flour
  • salt and pepper to taste
  • 1 tablespoon lemon juice

Melt butter, stir in flour and add broth or milk. Cook over hot water until smooth and thick, stirring constantly. Beat eggs well and add to hot sauce slowly, stirring constantly. Add ground veal, lemon juice, then salt and pepper to taste. Pour into greased custard cups and set in pan of warm water. Bake in 350 oven for about 30 minutes. Serve with reheated leftover gravy or with a medium white sauce. Serves 5 to 6.
