Tomato Aspic Ring Recipe

  • 4 cups tomato juice
  • 1 small onion, sliced
  • 3 whole black peppers
  • 4 whole cloves
  • 1 bay leaf
  • 1/4 cup chopped celery leaves
  • 1 teaspoon salt
  • 2 tablespoons brown sugar
  • 2 envelopes (1 tbs each) unflavored gelatin
  • 1/4 cup cold water
  • 3 tablespoons fresh or bottled lemon juice
  • 1/2 teaspoon Worcestershire sauce
  • 1 cup finely chopped celery

Simmer tomato juice, onion, peppers, cloves, bay leaf, celery leaves, salt, and brown sugar in a saucepan 5 minutes. Strain.

Soften gelatin in cold water; add to the hot, strained tomato juice. Stir until gelatin is dissolved. Add lemon juice and Worcestershire sauce. Chill till partially set.

Add celery. Pour mixture into 1 1/2-quart ring mold. Chill in refrigerator until firm. Unmold.
