- 1 large cucumber, pared
- 1/2 cup vinegar
- 2 tablespoons sugar
- 2 tablespoons water
- 1/2 teaspoon salt
- 1/4 teaspoon pepper
- 2 tablespoons chopped parsley
Slice the cucumber very thin into a flat dish. Combine vinegar, sugar, water, salt, pepper, and parsley, and pour over cucumber slices. Let stand in refrigerator at least 2 hours before serving. Yield: 8 to 10 servings.
