- 1 package (3 ozs) cream cheese, softened
- 2 tablespoons milk
- 1 baked 9-inch deep pastry shell
- 1 quart strawberries, hulled
- 1 1/2 cups water
- Few drops red coloring
- 1 cup sugar
- 3 tablespoons cornstarch
Blend together the cream cheese and milk; spread on bottom of baked pastry.
Cut all the strawberries in half. Fill shell with choicest berries, about half of them. Cook remaining berries in water in a saucepan, until soft. Mash or put through a sieve. Add red coloring.
Combine sugar and cornstarch. Add to sieved fruit. Cook and stir until thickened. Cool slightly. Pour over berries in shell.
Chill in refrigerator until set. Serve, topped with whipped cream or ice cream, if desired.
Yield: 6 servings.
