- 1 cup pecans, chopped
- 3 eggs, well beaten
- 1 cup dark corn syrup
- 1/2 cup sugar 1/8 teaspoon cinnamon
- 1 teaspoon vanilla
- 1 tablespoon flour
- 1/2 teaspoon salt
- 1 1/2 stick (1/4 cup) butter or margarine, melted
- 1 unbaked 9-inch pastry shell
Reserve 1/2 cup pecans for top. Combine other 1/2 cup pecans with eggs, syrup, sugar, cinnamon, vanilla, flour, salt, and melted butter. Pour into unbaked shell. Sprinkle remaining 1/2 cup pecans over top. Bake in a hot oven (400F) about 40 minutes. Serve warm or cold.
Yield: 6 to 8 servings.
