Sausage Scramble Recipe

  • 1 pound sausage meat
  • 1 large onion, peeled and diced
  • 4 cold boiled medium potatoes, diced
  • 1/2 teaspoon salt
  • pinch of pepper
  • about 1/2 cup cream

Crumble sausage in frying pan and fry lightly. Pour off most of the hot fat, add diced onion and simmer over low heat for 5 minutes. Add diced potatoes and seasoning, pour cream over all and continue cooking over low heat until cream is almost all absorbed and the potatoes are brown-the whole resembling an omelet.

The amounts of potato and cream will vary with the individual cook, but roughly each cup of diced potato requires around 1/ cup cream.

Serves 5 to 6.
