- 2 packages (10 ozs each) frozen baby lima beans
- 1 pound pork sausage meat
- 2 tablespoons flour
- 1/2 teaspoon celery salt
- 1 can (1 lb) tomatoes
- 1 cup shredded cheese food or Cheddar cheese
Cook beans according to directions on package.
Pan-fry sausage in a large skillet; use a large spoon or fork to break up and stir the meat while it cooks. As soon as all pink color of meat disappears, push meat to one side, tilt pan slightly toward opposite side and spoon off all but 1 or 2 tablespoons fat.
Sprinkle flour and celery salt over meat and stir to combine. Add tomatoes; cook and stir until slightly thickened. Add drained beans and pour into a 2-quart casserole. Cover with cheese and sprinkle with paprika. Cover with lid or foil and bake in a moderate oven (350F) 30 minutes.
Yield: 6 to 8 servings.
