- 1 3 1/2-pound chicken, cut into serving pieces
- salt and pepper
- 1 garlic clove, crushed
- 2 tablespoons butter
- 2 tablespoons oil
- 1/2 cup chicken broth
- 1/z cup orange juice
- 1 tablespoon lemon juice
- 2 teaspoons Worcestershire sauce
- 1/4 cup brown sugar
- 1/4 cup raisins
- 1/4 cup port
- 1 1/2 cups canned pitted sour cherries
- 1 tablespoon cornstarch
Season chicken with salt and pepper. Melt butter with oil and add garlic. Push garlic around in the pan for a minute and brown chicken on all sides. Meanwhile, blend a sauce from remaining ingredients except for cherries and cornstarch. Place chicken in casserole and pour sauce over chicken.
Cover and bake in preheated 350°F. oven for 35 minutes. Add cherries, blend in, and bake 10 minutes longer, uncovered. Transfer chicken to heated serving dish and add cornstarch, which has been dissolved in a little water.
Bring to a boil on top of stove and when sauce thickens, pour over chicken and serve immediately.
