- 1/2 pound salt codfish, freshened
- 3 1/2 inch slices salt pork, diced
- 4 medium potatoes, peeled and diced
- 2 medium onions, peeled and diced
- 6 cups milk
- salt and pepper to taste
Freshen codfish by soaking in cold water for several hours, preferably overnight, then pick apart carefully. Fry salt pork gently in the heavy kettle you are to use. When golden brown, add potatoes, onions and codfish.
Simmer gently in as little water as possible for about 20 minutes or until all is very tender. Then add milk and salt and pepper to taste. Heat very hot and serve.
