- 1 cup water
- 1 cup dark brown sugar (packed)
- 3/4 stick (6 tbs) butter
- 4 tablespoons (1/4 cup) cornstarch
- 1/2 teaspoon salt
- 1 2/3 cups milk
- 3 egg yolks
- 1 baked 9-inch pastry shell
- Sweetened whipped cream
Place water, brown sugar, and butter in the top of a double boiler. Cook over direct heat, stirring constantly, 2 minutes.
Combine cornstarch, salt, milk, and egg yolks; add to mixture. Cook over hot water, stirring constantly, until thick. Pour into baked, cooled pastry shell. Chill. Flute sweetened whipped cream over top before serving.
Yield: 6 servings.
