- 1 tablespoons butter
- 1 medium onion, peeled and chopped
- 1 pint canned string beans, drained
- 1 pint canned tomatoes, undrained
- 1 pint canned cream-style corn
- 1/4 teaspoon baking soda
- 1 pint milk, scalded
- salt and pepper to taste
Melt butter in bottom of heavy kettle. Add onion and cook slowly for about 5 minutes. Add beans, corn and tomatoes. Heat all very hot, then add soda (to prevent curdling).
As frothing subsides, add milk slowly, stirring well. Season to taste with salt and pepper and serve at once.
Will serve 4 to 5.
