- 4 cups (1 lb) fresh cranberries
- 2 cups sugar
- 2 tablespoons water
Wash cranberries in water. Lift them from water into a large kettle. Add sugar and water; stir to mix well. Cover and heat about 1 minute, or until berries begin to pop.
Uncover; stir lightly. (Don’t crush.) Cook slowly about 2 minutes; stir only enough to dissolve sugar. Let berries boil up. Stir lightly. Boil just 1 minute.
Remove from heat. (The berries should be almost whole and a clear sparkling color.) Chill in refrigerator. Yield: 3 cups.
