Potato Meat Ball Bake Casserole Recipe

  • 1 pkg. scalloped potatoes
  • 1 c. diced celery
  • 3 1/2 c. boiling water
  • 2 tbsp. butter or margarine
  • c. milk
  • 1/4 c. catsup
  • 1 tbsp. instant minced onion
  • 1 tsp. salt
  • 1/8 tsp. pepper
  • 1 c. soft bread crumbs
  • 1 lb. ground beef

Empty scalloped potatoes into 2-quart casserole. Add celery, boiling water and butter; stir gently. Bake, uncovered, at 400 degrees for 15 minutes. Combine egg, milk, catsup, onion, salt, pepper and bread crumbs; beat with fork or spoon. Add beef; mix thoroughly.

Remove potatoes from oven. Place rounded spoonfuls of meat, partially submerging each meat ball, into potatoes. This amount will make 14 to 16 meat balls.

Return casserole to oven: continue baking for 30 to 35 minutes. Garnish with parsley or strips of green pepper.

Yield: 4-6 servings.
