- 4 1/4 inch slices salt pork, diced
- 1 medium onion, peeled and chopped
- 1 1/2 cups peeled and diced parsnips
- 2 medium potatoes, peeled and diced
- 2 cups boiling water
- 1 teaspoon salt
- pinch of pepper
- 4 cups milk, scalded
- 1 tablespoon butter
In the bottom of heavy kettle, fry salt pork gently until golden brown. Add onion and continue cooking for 5 minutes longer.
Add parsnips, potatoes, boiling water, salt and pepper. Simmer until all is very tender, about 30 minutes. Add hot milk and butter, heat very hot and serve.
Will serve 6 to 8.
