Oven Stew Recipe

  • 3 to 4 pounds beef shank
  • 2 medium carrots, peeled and diced
  • 1 very small turnip, peeled and diced
  • 2 medium onions, peeled and diced
  • 3 medium potatoes, peeled and cubed
  • 1 1/2 teaspoons salt
  • teaspoon pepper
  • cup catsup
  • 3 cups hot water
  • flour for dredging

Cut meat from bone and cube. Crack bone and scrape out marrow. Melt marrow in frying pan. Dredge meat in flour and brown in melted marrow. Arrange meat in heavy baking dish which has a close-fitting lid and add turnip, carrots and onions Add catsup, salt and pepper and about 3 cups hot water.

Cover tightly and bake in 300 oven for 2/2 hours. Add potatoes and continue cooking until meat is very tender, about 45 minutes more. Serves 8.
