- 1 egg
- 1 1/2 cups sifted all-purpose flour
- Cream
- 1/2 teaspoon salt
- 2 teaspoons baking powder
- 1 cup sugar
- 1 teaspoon vanilla
Break egg into a measuring cup; add cream to 1 cup mark. In a mixing bowl put the salt, sugar, flour, and baking powder. Add egg-cream mixture and vanilla; beat 1 minute. Fill greased muffin pans a third full (not more). Bake in a moderate oven (375F) 30 minutes. To serve, spoon sweetened sliced berries between and atop the split gems. Garnish with sweetened whipped cream, if desired.
Yield: 15 to 18 gems.
