- 1 1/2 cups sifted flour
- 1 teaspoon baking powder
- 1 cup brown sugar (packed)
- 1 1/2 cups rolled oats (quick or regular)
- 1 1/2 sticks (3/a cup) butter or margarine
- 1 cup jam (apricot, cherry, strawberry, or combination)
Mix together the dry ingredients. Cut in butter until crumbly. Pat half of this mixture into a greased pan (9×13 inches). Spread with jam.
Cover with remaining crumb mixture. Bake in a moderate oven (350F) 35 minutes. Cool. Cut into squares. Serve plain or with whipped cream or ice cream.
Yield: 12 squares (3 inches) .
