Meat Ball Casserole Recipe

  • 1 lb. ground beef
  • 1 egg, beaten
  • 1 sm. onion, chopped
  • 2 slices bread, cubed
  • tsp. salt
  • tsp. pepper
  • 2 tbsp. shortening
  • 6 carrots, halved
  • 4 1ge. potatoes, halved
  • 4 sm. whole onions
  • 1 lge. can tomatoes

Mix beef, egg, onion, bread cubes, salt and pepper; form into balls the size of walnuts. Brown in shortening. Pour meat balls and fat into a 3-quart casserole; add carrots, potatoes and onions.

Pour tomatoes over meat and vegetables; season to taste. Bake, covered, at 375 degrees for 1 hour.

Yield: 4 servings.
