Meat and Vegetable Hash Recipe

  • 1 small onion, peeled and diced
  • 1/2 medium green pepper, diced
  • 1 tablespoon butter
  • 2 medium tomatoes, peeled and chopped
  • 2 tablespoons chopped celery
  • 2 tablespoons chopped parsley
  • 1 cup water
  • 2 cups diced cooked beef or pork
  • 2 tablespoons dry breadcrumbs for thickening salt and pepper to taste

Cook onion and green pepper in butter over low heat until tender. Add tomatoes, celery, parsley and water, cook 10 minutes. Add meat and simmer until all is very hot. Stir in breadcrumbs to thicken slightly, and serve at once. This dish is a good way to use leftover meat, and it is especially good served with hot Custard Johnnycake. Serves 4 to 5.
