Mashed Sweet Potatoes Recipe

  • 6 to 8 sweet potatoes
  • 1/4 stick (1/2 cup) butter or margarine
  • 3 tablespoons brown sugar
  • 1 teaspoon salt
  • Grated rind of 1 orange
  • 1/4 cup orange juice
  • 1/2 cup finely chopped pecans (optional)
  • Orange marmalade

Boil sweet potatoes in water; drain, peel, and mash. While hot, add butter, brown sugar, salt, orange rind, orange juice, and pecans. Beat with a fork or electric beater until light. Pile into a I V2-quart casserole. Dot surface with orange marmalade (or miniature marshmallows). Sprinkle with nutmeg, if desired. Bake in a moderate oven (350°F) 30 minutes. Serve hot.

Yield: 6 to 8 servings.
