Lime Ring Recipe

  • 2 packages (3 ozs each) lime-flavored gelatin
  • 1 1/2 cups hot water
  • 2 cans (1 lb each) pureed applesauce
  • Grated rind of 1 lime or lemon
  • 2 tablespoons lime or lemon juice

Dissolve gelatin in hot water. Add applesauce, lime rind, and lime juice. Pour into a 1 1/2-quart ring mold. Chill in refrigerator until set.  Serve on a flat serving plate.

Yield: 10 to 12 servings.
