Lemonade Torte Recipe

Crust

  • 1/2 cup flour
  • 2 tablespoons sugar
  • 1/2 cup finely chopped pecans
  • 1/2 stick (1/4 cup) butter or margarine, softened
  • I can (6 ozs) frozen lemonade
  • 1 cup whipping cream, whipped
  • Nutmeg

Filling

  • 2 eggs
  • 1/2 cup water
  • 2/3 cup sugar
  • 1 envelope (1 tbs) unflavored gelatin

To make crust:
Combine ingredients for crust and press firmly into bottom of spring form pan (9 or 10 inches). Bake in a moderate oven (350F.) 10 minutes. Cool.

To make filling:
Break eggs into a saucepan; beat slightly; add water, sugar, and gelatin. Mix to combine; let stand 1 minute. Heat slowly to cook eggs and dissolve gelatin. Remove from heat; add lemonade. Chill in refrigerator until partially set. Fold into whipped cream. Spread over baked crust. Sprinkle with nutmeg (preferably freshly grated). Chill in refrigerator until firm. To serve, remove side of pan and cut into wedges. Yield: 6 to 8 servings.
