- 3 pounds lamb breast, lean
- 4 cups fresh green beans, cut up
- 6 small onions, peeled
- 3 tablespoons any fat
- 3 cups water
- 4 tablespoons vinegar
- 1 1/2 teaspoons salt
- 1/8 teaspoon pepper flour for thickening
Cut meat into cubes and brown in melted fat in frying pan. Turn all, including any fat in pan, into a baking dish which has a lid. Place vegetables on top of lamb. Add salt, pepper, water and vinegar. Cover and bake in a 350 oven until meat and vegetables are tender, about 11/2 to 2 hours. Shortly before serving, thicken gravy by adding a thin paste of flour and water to 1/2 cup of the hot liquid, then returning diluted flour paste to the meat and vegetables, blending well. Cook 10 minutes longer. Serves 6.
