- 6 ounces fine noodles
- 2 pounds ground beef
- 1 tablespoon oil or fat
- 2 cups sliced green onions
- 1/2 pound fresh mushrooms, washed and sliced
- 1 pound fresh spinach, washed and torn
- 1/2 cup soy sauce
- 1/4 cup water
- 1 teaspoon sugar
- 2 cups chopped celery
Cook noodles according to directions on package. Drain. Place in 3-quart casserole.
Brown meat in oil in a large skillet; cook and stir until pink color of meat disappears. Add onions; cook 2 minutes. Add mushrooms and spinach. Combine soy sauce, water, and sugar, and add to mixture; cook only until spinach is wilted. Add celery and stir to combine. Pour over noodles in casserole. Place in a slow oven (325T) to keep warm.’ Celery should stay crisp, so don’t cook. Serve hot.
