- 1 1/2 cups flour
- 1/2 cup lard
- 1 teaspoon any baking powder
- 1/2 teaspoon salt
- cold water
Make this extra-rich biscuit dough by sifting flour, salt and baking powder together, cutting in the lard and adding enough cold water to make the dough stick together. Roll out on floured board to about 1/4 inch thick and cut in squares 3 x 3 inches. Put a heaping teaspoonful of filling in the center of each square, fold into a triangle and pinch edges together. Bake in 400 oven for about 15 minutes. Serve hot. Serves 5 to 6.
HAM FILLING:
- 2 tablespoons butter 2 tablespoons flour 1 cup hot milk
- 2 cups ground cooked ham
- 1 small onion, peeled and ground pinch of pepper
Make a white sauce by melting butter, stirring in flour until smooth, then adding milk, stirring constantly as it thickens. Add ham, onion and seasonings.
