- 1 medium onion, chopped
- 1/2 stick (1/4 cup) butter or margarine
- 4 tablespoons (1/4 cup) flour
- 2 1/2 cups milk
- 2 tablespoons chopped parsley
- 1 teaspoon salt
- 4 cups cubed cooked potatoes (about 4 medium potatoes; half-inch cubes)
- 3 hard-cooked eggs, sliced
- 3 cups cubed cooked ham (half-inch cubes)
- 2 cups shredded Cheddar cheese or cheese food
Pan-fry onion in butter in a large skillet about 1 minute. Add flour; stir to blend. Add milk gradually; stir and cook until thickened. Add parsley, salt, potatoes, eggs, ham, and 1 cup of cheese. Pour into a 2-quart casserole. Sprinkle remaining cheese over top. Bake in a moderate oven (350F) 30 minutes, or until bubbly. Serve hot.
