- 2 1/2 cups green peas, fresh or frozen
- 2 1/2 cups canned tomatoes, undrained
- 1 small onion, peeled and diced 1 cup water
- 2 tablespoons butter, melted 2 tablespoons flour
- 1/4 teaspoon baking soda
- 3 cups milk, scalded
- salt and pepper to taste
Simmer peas, tomatoes and onion in the 1 cup water until peas are very tender. Remove from fire and rub all, with the liquid, through a sieve.
Return to heat and thicken with paste made from melted butter and flour, stirring well. Add soda (to prevent curdling), then when froth dies down add scalded milk. Season to taste with salt and pepper. Serve at once.
