Frozen Fruit Salad Recipe

  • 1 package (3 ozs) cream cheese, softened
  • 1/2 cup mayonnaise
  • 2 tablespoons milk
  • 2 tablespoons fresh or bottled lemon juice
  • 2 tablespoons sugar
  • 1 can (11 ozs) mandarin oranges, drained
  • 1 can (1 lb) dark sweet cherries, drained
  • 1/2 cup chopped pecans
  • 1 cup whipping cream, whipped

Blend cream cheese with mayonnaise and milk; add lemon juice and sugar. Combine with oranges, cherries and pecans. Fold in whipped cream.

Place 8 fluted paper muffin liners in muffin cups. Spoon salad mixture into each. Freeze in a freezer at 0F, or lower, until firm, at least 3 hours.

To serve, peel off muffin liners and place individual salads on crisp lettuce. Serve frozen.

Yield: 8 servings.
