- 1/2 cup liquid drained from thawed strawberries, plus water, if necessary
- 1 1/2 cups miniature (or cut-up) marshmallows
- 1 tablespoon fresh or bottled lemon juice
- 1 package (10 ozs) frozen sliced strawberries, thawed and drained
- 1 cup whipping cream, whipped
- 1 baked 8-inch pastry shell or Coconut Pie Shell
Heat liquid and marshmallows in a saucepan until marshmallows melt. Remove from heat. Add lemon juice and drained strawberries.
Cool. Fold in whipped cream. Pile into shell and chill in refrigerator until set. Keep in refrigerator until ready to serve.
Yield: 6 servings.
