- 1 lge. onion, chopped
- 1 clove of garlic, minced
- 2 tbsp. salad oil
- 1 lb. ground beef
- 1 can tomatoes
- 1 can red kidney beans
- I 15-oz. can chili con carne without beans
- 1/2 tsp. salt
- 1 tsp. pepper
- 1 1 1-oz. can tortiIlas
- 1 c. grated Cheddar cheese
Saute onion and garlic in salad oil until soft; remove with slotted spoon and set aside.
Shape ground beef into large patties; brown for 5 minutes on each side and break into chunks. Add onion mixture, tomatoes, beans, chili con carne, salt and pepper; heat to boiling. Place 3 tortillas, overlapping if necessary, in 12-cup baking dish; top with 1 cup of sauce.
Repeat to make five layers of each, ending with sauce. Sprinkle with cheese. Bake at 400 degrees for 30 minutes. NOTE: Frozen tortillas maybe substituted for canned tortillas.
