- About 4 cups mashed potatoes
- 7 eggs
- 3 tablespoons butter, melted
- salt and pepper to taste
- 12 small strips bacon, partially cooked
Beat 1 whole egg, then blend with melted butter into mashed potatoes, with salt and pepper to taste. Beat until light and fluffy.
Fill a buttered, deep pie plate with the potato mixture, smoothing the top flat. Make six depressions in the mixture with the back of a spoon, and break 1 egg into each depression. Lay the strips of partially cooked bacon over all.
Bake in 400 oven until eggs are set and bacon crisp. Will serve 6.
