Double Fudge Cake Recipe

  • 1/2 package (2 ozs) sweet chocolate, chopped
  • 1/4 cup water
  • 1/2 cup shortening or butter
  • 1 cup sugar
  • 1 teaspoon vanilla
  • 2 eggs, separated
  • 1 1/4 cups sifted cake flour
  • 1/2 teaspoon soda
  • 1/2 teaspoon salt
  • 1/2 cup buttermilk

Grease bottom of pan (8x8x2 inches).

Place chocolate and water in a small saucepan. Heat slowly to melt chocolate. Cool.

Cream shortening, sugar, and vanilla until well blended. Add egg yolks and beat until mixture is fluffy. Sift flour, soda, and salt together and add to creamed mixture alternately with the buttermilk. Add chocolate; mix to blend. Beat egg whites until stiff but not dry; fold into batter.

Pour into prepared pan and bake in a moderate oven (350F) 50 to 55 minutes. Cool. Frost with Fudge-Nut Frosting. Cut into squares to serve.

Yield: 9 servings.
