- 3 eggs
- 1 teaspoon vanilla
- 3/4 cup sugar
- 3/4 cup sifted all-purpose flour
- 1/2 teaspoon double-acting baking powder
- 1/2 teaspoon salt
- 3 cups (12 ozs) nuts, chopped coarse (use walnuts, pecans, or Brazil nuts)
- 1 pound mixed candied fruit, chopped
- 1 cup (8-oz bottle) maraschino cherries, halved and drained
Beat eggs; add vanilla and sugar. Sift flour, baking powder, and salt together; add to first mixture. Add nuts and fruit and cherries; mix to combine.
Grease loaf pan (9×5 inches) ; line bottom with waxed paper. Pour batter into prepared pan. Cover with aluminum foil and bake in a slow oven (300F) 1 hour. Uncover and bake 45 minutes More.
Run a spatula along sides of cake; invert on a cake rack or cutting board to cool. To serve, cut in very thin slices. Yield: 25 to 30 slices.
