Country Style Molasses Cake Recipe

  • 1/4 cup shortening
  • 1/2 cup sugar
  • 1 egg
  • 1 teaspoon vanilla
  • 1/2 teaspoon salt
  • 1/4 cup molasses
  • 1/4 cup dark corn syrup
  • 1/4 teaspoon soda
  • 1 1/2 teaspoons double-acting baking powder
  • 2 cups sifted all-purpose flour
  • 1/2 cup milk
  • 1/2 cup chopped nuts
  • 1 cup raisins or chopped dates

Cream shortening and sugar. Add egg, vanilla, salt, molasses, and syrup. Beat until well blended. Add soda and baking powder to flour and sift to combine. Add these dry ingredients alternately with milk to creamed mixture. Beat only enough to blend.

Stir in nuts and raisins. Pour batter into greased baking pan (13×9 inches). Bake in a moderate oven (350F) 30 minutes. Cool in pan. Spread with Creamy Lemon Frosting.

Yield: 12 to 16 servings.
