- 1 large unpared cucumber
- 1/2 cup mayonnaise
- 1 teaspoon celery seed
- 1/2 teaspoon salt
- 1/4 teaspoon pepper
- 1 tablespoon chopped parsley
- 1 quart small-curd cottage cheese
Dice cucumber into quarter-inch cubes. Add all remaining ingredients and stir to blend well. Chill in refrigerator. To serve, garnish with parsley or cucumber slices. Yield: 12 to 16 servings.
