- 1 cup cottage cheese
- 1 tablespoon melted butter
- 1 tablespoon flour
- 2 eggs, beaten
- pinch of salt
Put cottage cheese through a sieve and mix with other ingredients. Beat well. Drop onto hot griddle in quite small cakes and fry until brown on both sides. I these delicate little cakes break easily, and care should be taken in turning them.
They are especially good when spread with a little strawberry jam or just dusted with sugar.
