- 1 fresh beef tongue
- 2 tablespoons vinegar
- 1 tablespoon salt
- 4 whole cloves
- 3 bay leaves
Wash tongue thoroughly and place in kettle which has a tight-fitting lid. Add water to cover, then add vinegar, salt and spices. Simmer covered until tender, about 3 to 4 hours. Take out tongue and remove skin, fat and gristle. Return to kettle, remove from fire and let cool in the liquid. Drain and chill in refrigerator before slicing.
Tongue cooked this way is excellent for sandwiches, also to serve with potato salad.
