- 1 stick (1/2 cup) butter or margarine
- 1 cup sifted all-purpose flour
- 1 tablespoon brown sugar
- 2 eggs
- 1 1/2 cups brown sugar (packed)
- 1 teaspoon vanilla
- 1 cup flaked coconut
- 1/2 cup chopped nuts
- 1/2 teaspoon baking powder
Combine butter, flour, and 1 tablespoon brown sugar, and pack into a greased 8×8-inch pan. Bake in a moderate oven (350F) 15 minutes.
Break eggs into a mixing bowl. Beat slightly. Add remaining ingredients and mix to blend. Pour over baked layer.
Return to moderate oven and bake 30 minutes longer. Cool; cut into squares. Serve plain or top with ice cream or sweetened whipped cream. Yield: 9 servings.
