Coconut Spice Tote Cake Recipe

  • 1 package (1 1/4 lbs) spice cake mix
  • 1/2 stick (1/4 cup) butter or margarine
  • 1 package (4 ozs) or 1 1/2 cups flaked coconut
  • 1 cup light brown sugar
  • 2 tablespoons grated orange rind
  • 1/4 cup corn syrup
  • 1/4 cup milk
  • 1 teaspoon vanilla

Prepare cake according to directions on package. Bake in a 13x9x2-inch pan.

Melt butter in a saucepan. Add all remaining ingredients and spread on the baked cake. Place under broiler and broil 3 or 4 minutes, or until topping is bubbly. Be careful not to burn. Cool cake in pan on wire rack.
