Chicken Sate Recipe

  • 3 chicken breasts, skinned and boned 6 scallions, minced
  • 1/2 cup soy sauce
  • 2 tablespoons peanut oil
  • 2 tablespoons dark corn syrup 1 teaspoon ground ginger
  • juice of 1 lemon
  • 1 tablespoon dry sherry
  • 1 large onion, cut into 1-inch squares
  • 1 large green pepper, cleaned and cut into
  • 1-inch squares

Cut chicken into 1-inch pieces. Mix scallions, soy sauce, peanut oil, corn syrup, ginger, lemon juice, and sherry in deep bowl. Marinate chicken for an hour or two.

Bring 1 quart of water to a boil and cook onion and green pepper squares for 3 minutes. Drain and cool. Thread 4 pieces of marinated chicken between squares of onion and pepper on small dampened wooden skewers. Grill under hot broiler, turning often until golden. Baste with marinade as you turn skewers. Should cook only 5 to 6 minutes all together.
