Chicken Rice Salad Recipe

  • 3 cups cooked rice. chilled
  • 1/2 cup Zesty French dressing
  • 3 cups cubed cooked chicken
  • 1/2 cup sweet pickle relish
  • 2 cups finely chopped celery
  • 1/2 cup mayonnaise
  • 1/4 cup sliced pimento olives
  • Lettuce

Combine rice, chicken, pickle relish, celery, olives and French dressing. Chill at least 2 hours in refrigerator. Stir in mayonnaise. Serve in lettuce lined bowl or in lettuce cups on large chop plate. Add chopped hard-cooked eggs, if desired. Yield: 10 to 12 servings.
