chicken braised in sherry recipe

  • 1 4-pound roasting chicken
  • 4 tablespoons butter
  • 1 tablespoon olive oil
  • 1 carrot, chopped
  • 1 medium onion, chopped
  • pinch thyme
  • 1 clove garlic, minced
  • 1 bay leaf
  • salt and pepper
  • 1 cup dry sherry

In large ovenproof casserole brown chicken on all sides in butter and oil. Add remaining ingredients and bring to a boil. Baste chicken with butter and braise in covered casserole in 350°F. oven for 1 hour and 15 minutes. Baste every 15 to 20 minutes. Remove lid last 15 minutes of cooking.

Transfer chicken to heated serving dish. Remove as much fat from juices in casserole as possible. Strain and pour over chicken. Surround chicken with 1 pound sauteed whole fresh mushrooms.

Serves 4 to 5.
