- 8 serving pieces chicken
- 4 or 5 tablespoons butter
- 2 shallots, minced
- salt and pepper to taste
- 2 cups light cream
- 3/4 cup sherry
Melt butter in skillet and add shallots and saute for 5 minutes. Remove to ca: -,e role. Season chicken, brown on all sides, and transfer to casserole. Pour cream and sherry over chicken.
Bake in preheated 350°F. oven for 45 minutes. Remove chicken from casserole and whisk cream sauce for 5 minutes over heat on top of stove. Pour over chicken. Serve with herbed rice and green vegetables.
