- 1 batch Pie Pastry for 2 Crusts
- 2 pounds lean pork
- 4 medium apples
- 2 tablespoons white sugar
- 1 teaspoon salt
- 18 teaspoon pepper
- 1/4 teaspoon ground sage
- 1 cup sweet cider
- 1 tablespoon butter
- 1 beaten egg
Cut pork in strips 1 x 2 inches. Peel and slice apples. Line a deep pie plate with pie dough rolled about 1/8 inch thick. Put in a layer of pork and sprinkle with a little of the salt, pepper and sage. Next, add a layer of the apple slices with some of the sugar sprinkled over them. Continue making alternate layers of pork and apples until all are used. Add sweet cider and dot top layer with the butter.
Cover with the top crust, in which several slits have been made. Brush crust with beaten egg and bake in 350 oven for about 1 hour and 30 minutes. Serves 6.
