Cherry Cheese Mold Recipe

  • 1 package (3 ozs) lime-flavored gelatin
  • 1 package (3 ozs) cream cheese, softened
  • 1 1/2 cups water
  • 1 can (1 lb) dark sweet cherries, drained
  • 1 cup whipping cream, whipped

Mix the dry gelatin and cream cheese until well blended. Heat 1 cup water to boiling and add. Stir to blend; add remaining 1/2 cup water. Chill in refrigerator until partially set. Whip with rotary beater about 2 minutes. Fold in drained cherries and whipped cream. Pour into 1-quart ring mold. Chill in refrigerator until set, about 1 hour. Unmold  on a flat serving plate. Fill center with melon balls or fresh pineapple chunks in season, if desired; or garnish with endive or lettuce.

Yield: 8 to 10 servings.
