- 2 eggs
- 2/3 cup milk
- 2 teaspoons salt
- 1/a teaspoon pepper
- 3 slices bread, crumbled
- 1 onion, chopped
- 1/2 cup shredded raw carrot
- 1 cup shredded Cheddar cheese
- 11/2 pounds ground beef
- 1/4 cup brown sugar
- 1/4 cup catsup
- 1 tablespoon prepared mustard
Break eggs into a large mixing bowl; beat slightly with a fork. Add milk, salt, pepper, and crumbled bread. Beat until bread has disintegrated. Add onion, carrot, cheese, and beef; mix well (with hands if necessary). Pack into a loaf pan
Combine brown sugar, catsup, and mustard; spread over surface of loaf. Bake in a moderate oven. (350F) 1 hour. Let stand 10 minutes. Loaf can be drained and inverted on platter, but since glaze is on top it is best to lift the loaf out with two pancake turners or wide spatulas. Slice and serve hot or cold.
Yield: 8 hot servings or 12 to 15 cold slices.
