Beef Noodle Casserole Recipe

  • 1 lb. ground beef
  • 2 tbsp. lard
  • 1/4 c. finely chopped onion
  • 2 tsp. salt
  • 1/8 tsp. pepper
  • 1/8 tsp. chili powder
  • 3 1/2 c. canned tomatoes
  • 8 oz. medium noodles
  • c. finely chopped green pepper

Brown beef in lard in heavy skillet, stirring frequently. Add onion, salt, pepper and chili powder and cook slowly. Add tomatoes; simmer.

Cook noodles in boiling salted water; drain. Add noodles and green pepper to tomato-meat mixture. Place in 2-quart casserole. Heat at 350 degrees for 20 minutes.

Yield: 8 servings.
