Beef Macaroni Casserole Recipe

  • 1 lb. ground beef
  • 1 tbsp. salad oil
  • 2 med. green peppers, cut into strips (opt.)
  • 1 c. sliced mushrooms (opt.)
  • 1 med. onion, diced
  • 1 tsp. salt
  • 1/4 tsp. pepper
  • 2 sm. cans tomato sauce
  • 1 c. water
  • 2 c. uncooked macaroni
  • Grated cheese

Brown ground beef in hot oil; add green pepper strips, mushrooms and onion. Cook until peppers are tender but not brown; add salt and pepper.

Add tomato sauce and water; stir well and simmer for 15 minutes. Cook macaroni; drain. Alternate layers of macaroni, meat mixture and cheese in 1 1/2 quart casserole. Bake at 350 degrees for 35 minutes.

Yield: 4-6 servings.
